I have a few friends who cannot have gluten so when I saw this product I had to try it. The noodles are made from a blend of corn and quinoa. Those are the only two ingredients.....organic corn flour and organic quinoa flour. No added salt or other preservatives. There are a few suggested recipes on the box like Pasta Anna ( a pasta dish with lots of veges and an olive oil sauce) and then an Italian sausage salad. As my followers know I myself only eat meat once every few months on a very special occasion....but I have reviewed the kosher turkey sausages that one can use in place of real pork sausage.
The noodles cook quickly and they say "do not overcook!"....several times on the package.

The noodles are very bouncy....light....not at all heavy or starchy like noodles made with white flour.
I made a tomato sauce with chopped garlic, onions, and tomatoes, seasonings, and olive oil and it was very tasty. I added some Philadephia brand cream (about a tablespoon) and this made it even lighter and tastier. It was like a vodka sauce. I had some plain with parmesean tossed over the noodles and that was good too.
I would definitely recommend this product to a friend, especially people who cannot tolerate gluten. I tried the Rotelle (curly noodles) which were really light and fun and I think they would be great in a cold tuna salad as well.
I bought the product at Cala foods which is a branch of Ralphs supermarket on the West coast.
The product also has a star K on it and it is pareve, USDA organic.
